#840: Bikini Rolls

 
 
 
Look at this super healthy lunch.  I loved the freshness of the veggies.  This would be a great lunch in the summer too when everything is super, super fresh.  The only thing about this recipe that I don't like is the wrapper it's wrapped up in.  The recipe says to use an egg roll wrapper which is nice and sturdy but is too thick/gummy.  So after the first day I ate it, I decided to make it the next time (or two or three!) as a sandwich in some whole grain bread.  It was still just as good, just different. 

Egg Roll Wraps
Lettuce
Avocado
Carrots
Cucumber
Cabbage

Wrap all 5 ingredient together and serve with Peanut Sauce!
