#825: Lemony Green Beans


This green bean side dish is extremely easy to prepare and would be a great accompaniment to almost any meal.  I ate it with meatloaf and loved it.  I tried to get the kids to eat it but they would barely put it in their mouth.  Even Matthew was spitting it out.  Don't let that dissuade you though, my kids are not the best judges of veggies.

1/4 cup chicken broth
2 tablespoons olive oil
1-1/2 pounds fresh green beans, trimmed
3/4 teaspoon lemon-pepper seasoning
Lemon wedges
 
In a large skillet, heat chicken broth and oil over medium-high heat. Add green beans; cook and stir until crisp-tender. Sprinkle with lemon-pepper. Serve with lemon wedges. Yield: 6 servings.

This is an excellent low point weight watchers meal.  The only thing you have to account for is the olive oil, so use as little as you can!
