#815: Ritz Chicken
This chicken is supposed to be fried and I'm sure the coating would have been fabulous if we would have made it that way. But we were trying to make it healthier so we baked ours (see directions below) instead of frying it. I decided to double coat this to make it a little thicker and crispier. It was delicious. We all enjoyed this one! I would definitely make this again.
6 medium sized boneless skinless chicken breasts
1 package of Ritz crackers
2 eggs (I used egg substitute)
splash of milk
Crush Ritz crackers. Put on a plate or on wax paper on the counter. Mix eggs and milk and beat.
Roll chicken in egg and milk mixture, then place in crackers, roll and press until chicken is coated well. Place in a lightly oiled pan, fry, flipping continuously until coating is crispy and golden, and chicken is cooked.
The chicken can also be baked rather than fried if you prefer. Bake at 350 for 30-45 min.
