#1,690: Waffled Breakfast Quesadilla

My kids do no like eggs, but they do like sausage, quesadillas and waffles, so I thought I'd try sneaking this one past them.  Shockingly, 2 of the 3 enjoyed these.  The 3rd one said it had too much cheese.  Really?!  She didn't notice or complain about the eggs she normally doesn't like, but said I used too much cheese?  Whatever.  

Personally, this recipe below looks like it makes a lot...or would be good for people who like eggs.  I used 2 eggs for one waffle/quesadilla and had some scrambled eggs leftover.  So you might want to adapt this to your family and how much you think you will really eat/use. 

4 - 8 in. flour tortillas
2 cups scrambled eggs, (about 7 eggs)
1 1/2 cups Mexican cheese
12 pieces bacon, cooked (I used chopped, cooked turkey sausage)
1 tablespoon canola oil or non-stick spray

Heat waffle iron and then using a brush, coat waffle iron with Canola Oil.

Place 1/2 cup scrambled eggs onto half of one 8 inch tortilla, layer with cheese and three bacon pieces. Fold other half of quesadilla over and transfer to waffle iron. Cook until browned, about 7-10 minutes. Repeat with remaining 3 tortillas.
