These potatoes are YUMMY! This will definitely be making it on our menu again...this month...maybe more than once! I didn't have (or want to buy) fingerling potatoes so I just cut russet potatoes into 12 pieces instead.
1 Lb Fingerling Potatoes, cut in half
1 Tbsp Olive Oil
1 Tsp Sea or Kosher Salt
1/4 Tsp Garlic Powder
1 Tsp Italian Herbs
1. Preheat oven to 400 degrees.
2. Toss the potatoes with the olive oil, salt, garlic powder and herbs on a sheet tray.
3. Bake for 40 minutes or until the potatoes are golden on the exterior and tender inside.
