Freezer Cooking Day January 2012
Well our freezer and pantry were pretty much bare so it was time for a freezer cooking day. And since we are on winter break from school, I knew it was going to be a big cooking day. So I sent the 2 little ones to school, Allison played games with daddy and I cooked pretty much all day long. I had to take a break between 3 - 7:30, but started up again after the kids went to bed and finished up.
Here's what I got done today:Baked Italian Ziti
Balsamic Roast Beef
Beef Enchiladas
Crockpot Chicken Fajitas
Crockpot Chicken Marsala
Crockpot Whole Baked Chicken
Diet Coke Sloppy Joes
Marinated Grilled Pork chops
Meatloaf Mini’s
Mini Skillet Meatloaves
Pork Chops with Rice
Ranch Cheddar Burgers
Sausage Hash
Simple Turkey Chili
Slow Cook Bourbon Chicken
Slow Cook Cilantro Lime Chicken
Slow Cooker Chicken Dinner
Tacos
Turkey and Quinoa Meatloaf Muffins
Turkey Meatloaf
Whole Chicken in a Slow Cooker
I also made (and will be posting later tonight (hopefully!)) several non-freezer meals:
Apple Salad
Brunch Bake
Crunchy Black Bean Tacos
Meatless Lentil Soup
Roasted Wild Mushrooms
Strawberry Banana Slushy
With the addition of meals like grilled kielbasa, breakfast for dinner, spaghetti, and pizza crusts made from home (all of which are the most requested meals from my family), dinners are ready to go until early February. I'm sure things will come up and meals will get bumped around so hopefully dinners are ready until about Valentine's Day. Thank goodness. Now this does not include side dishes or vegetables served with it. That's easy to add on though at the last minute.
