#764: Roasted Wild Mushrooms


I found this recipe in a recent Chop Chop Magazine.  It's aimed towards kids and families and I can tell you with 100% certainty, my kids wouldn't even put their fork in this!  I however enjoyed it, although it wasn't anything new, unusual or special.  I could have come up with this recipe on my own. 
1 pound Mushrooms (you can use any combination of button, white, shiitake, portobello, cremini, or oyster mushrooms), left whole (I used baby bello mushrooms and big portobellos, diced)
1 tablespoon olive oil
1 clove garlic, peeled and minced, or put through a garlic press
1 teaspoon salt
1⁄2 teaspoon black pepper


Turn the oven on to bake and set it to 400 degrees.

Put the mushrooms on the baking sheet and add the olive oil, garlic, salt, and pepper. Mix well with clean hands or the wooden spoon

Put the baking sheet in the oven. Roast until the mushrooms are golden brown, 20 to 30 minutes.

Serve right away or cover and refrigerate up to overnight.
