#769: Cheesy Cauliflower Pancakes


I came across a new blog which posted a recipe for Cheesy Cauliflower Pancakes.  I absolutely love cauliflower (and usually have it in our fridge) so I figured I'd give these a try with our dinner.  The girls like cauliflower too...and pancakes, so I hoped they would be excited to try/eat them as well.  Unfortunately I was the only one who enjoyed these.  Even Matthew wasn't very fond of them and he'll usually eat anything.  I think these would be better if they were pan fried (they would be crispier) but I wanted to omit the oil so I baked these instead.  I still thought they were good though and I would make them again.  I pureed the cauliflower in my food processor and then added the rest of the ingredients and pulsed until combined.  Then I used 1/3 size measuring cups to scoop out each portion. 

I tried cooking these on our griddle and they totally stuck to the griddle and did not turn out at all.  Then I put them on a parchment-lined baking sheet and they cooked up perfectly.  I baked mine in a 425 degree oven for about 35 minutes. 


1 head cauliflower
2 large eggs (I used egg substitute)
1/2 c cheddar cheese, grated
1/2 c panko
1/2 t cayenne pepper
salt
olive oil (I omitted)

Cut cauliflower into florets and cook in boiling water until tender about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, panko, cayenne and  salt to taste.

Coat the bottom of a griddle or skillet with olive oil over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side. Keep each batch warm in the oven while you cook the rest.

(Baked in the oven without oil, and using egg substitute = 10 ww+ pts for the entire batch.)
